With amuse bouche of crispy mascarpone cheese and truffle dumpling, edamame beans, alfalfa sprouts and espelette chili, followed by a main course of Yellow tail king fish, saffron champagne risotto and beurre blanc foam, this menu is uniquely sculpted for its underwater surroundings. The four-course set lunch menu offers lighter but delicious fare, including appetisers of green mango and papaya salad, seared sea scallops, carrot mousseline, watercress and organic olive oil, followed by a third, main course of Short loin of lamb, marinated white asparagus, tomato relish, smoked cherry mozzarella, lime and caramel jus.
